Chef Marc Bernardi and his team will offer you an exclusive menu, the result of a personal culinary journey. By blending research and development, they will reinterpret his gastronomic experiences, from his origins in Val Gardena to his most recent experiences in French-speaking countries.

Marc Bernardi, born in 1991 in Bolzano, grew up experiencing two very distinct Italian regions: Val Gardena, in the heart of the Dolomites, and Mantua, in the Pianura Padana. These contrasting realities deeply shaped his culinary identity. From his grandmother Elsa, he learned the appreciation for South Tyrolean traditions, while Mantua introduced him to intense flavors and diverse recipes.

Returning to South Tyrol, Marc chose to rediscover and reinvent his gastronomic roots, embarking on a high-level professional journey. Crucial experiences came from collaborations with different Michelin-starred chefs who taught him the value of freshness and seasonal ingredients.

In Bolzano, he met Sofia, his partner both in life and in the kitchen, skilled in handmade fresh pasta. Together they create balanced dishes blending tradition with modern techniques, enhanced by international influences.
Driven by curiosity and determination, Marc narrates stories through each dish, thoughtfully highlighting every ingredient. A finalist in the "Italian Emerging Chef" competition and awarded as "South Tyrol Emerging Chef," his ambition is now focused on reaching the pinnacle of international cuisine.
